80/20 Christmas Brunch Recipes
1 Peppermint Mocha Smoothie
The perfect smoothie to get you in the holiday mood.
Makes 1
Type Vegan, Gluten Free
Time 10 minutes
Ingredients
2 cups Nut milk
1 banana
1 scoop Genuine Health Protein Powder (use code TFFGH20 for 20% off)
1 tsp Blume Hot Chocolate Mix (use code THEFITFATALE for 15% off)
Sprinkle Rawcology Mint Chocolate Granola
Instructions
Blend everything in the blender, except the Rawcology.
Once fully blended, top with as much Rawcology that pleases you & enjoy ;)
2 Gingerbread Loaf
I love waking up and having a coffee paired with a delicious pastry so let’s make it a superfood loaf ;)
Makes 1
Type Vegan, Gluten Free
Time 45 minutes
Ingredients
2 cups gluten-free flour from Queen Street Bakery (or a similar 1-1 GF flour)
1 cup Truvia brown sugar (this mix is my fave half brown sugar and half Truvia)
3 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tsp vanilla extract
1 cup apple sauce
3 tsp Oat milk (or similar nut milk)
2 tsp ginger
2 tsp cinnamon
2 -3 tbsp Blume Gingerbread
Icing
2 non-dairy cream cheese( we love Le Grand)
1/2 cup of trivia brown sugar
salt to taste
Instructions
Preheat oven to 350 degrees F and line the loaf pan with parchment or rub a bit of coconut oil on the inside.
In a large bowl mix together dry ingredients together, once mixed fully, add the vanilla extract, apple sauce, oat milk and Blume Gingerbread.
Once fully incorporated, pour batter into a loaf tin and bake for 35 minutes.
While the loaf is in the oven, make the icing by blending all the ingredients in an electric mixer and place it in the fridge to set.
Once the loaf has cooled for around 30 mins, spread some icing on top & enjoy every bite!
Notes:
*Will keep covered at room temperature for 5 days or freeze for up to 1 month.

Ingredients
1 GF Bagel ( my favourite is Queen Street Bakery)
1 package of Smoked Salmon
1 smear of Le Grand Cream Cheese
1 sprig of fresh parsley
Instructions
Begin by toasting your bagel.
Once toasted to your liking, smear on the cream cheese, add smoked salmon and top with fresh parsley.
Enjoy this simple yet delicious holiday breakfast!
