Warm Spicy Mexican Bowl
The days are cold, busy and short this time of year. I know how hard coming up with ideas for recipes can be so I wanted to share one of my favourite easy to make bowls.
Makes 2 Bowls
Type Vegan, Gluten Free
Time 30 minutes
Ingredients
Bowl
2Tbsp @chosenfoods Avocado oil
1 Cup Broccoli ( chopped)
1 Bell Pepper (Chopped)
1 Cup Mushrooms (Chopped)
2 Spicy Vegan Sausages
1 Cup Whole grain rice or Kale
Guacamole
5 Whole Avocados
Salt (to taste)
Pepper (to taste)
1 tsp Chilli powder
3-4 dashes Hot sauce
Red pepper flakes ( to taste)
Top with Cucumber, Jalapeño or Salsa & Hot sauce
Instructions
Warm @chosenfoods avocado oil to a sauté pan
Add in chopped up broccoli, peppers & mushrooms
* Chosen Foods avocado oil is perfect for cooking veggies on high as it doesn’t release any carcinogenic when heated**
In a second pan, add more @chosenfoods avocado oil
Add sliced spicy vegan sausages to the second pan
While these cook it’s guacamole time!
For the guacamole, use @chosenfoods avocado oil and a hint of their ranch dressing to make it extra creamy!
Add whole grain rice (or kale!) as the base of your bowls and build on top
Top off with cold toppings like cucumber & jalapeño or salsa & hot sauce to taste!
