Greek Salad
I was raised by a Greek mom and have traveled to Greece 4 times. It is my favourite place on earth to be and the Mediterranean diet is not only how I grew up but arguably one of the most beneficial diets for our body and long term health. My greek salad is a staple in our household, especially on a warm summer night, paired with a veggie burger or fresh fish and a glass of crisp white wine.
Greek Salad
Makes 2
Type Plant-Based, Vegetarian, Gluten-Free
Time 10 minutes
Ingredients
2 fresh & ripe tomatoes
1/2 of an english cucumber
1/4 of a red onion
feta to your liking (I usually use a small block)
10-15 kalamata olives
sprinkled oregano (about a tbsp)
generous amount of olive oil
salt and pepper
Instructions
Slice your cucumber down the middle then cut into half moon pieces.
Cut each side of the tomato off and slide lengthwise for long slices.
Cut red onion into thin slices and break them apart.
Add your cucumber, tomato, kalamata olives and red onion into a large bowl.
Break apart the feta so that it is crumbled not sliced.
Sprinkle your oregano, salt and pepper.
Pour over a generous amount of olive oil & toss together.
Notes
Crumble feta instead of slicing it distributes the feta so that each bit has a little bit of it. Adding generous amounts of olive oil helps with your skin, hair, and digestion. The fat's in olive oil are healthy fats, and after being raised by a greek mama, I can say that olive oil is one of my best friends in the kitchen and for my body.
