I know as the weather gets cooler it gets harder to grab a salad. The way I shift my salads for fall is by adding in a warm topping like cooked veggies or vegan chicken & a really great tasting dressing.

Here is one of my tasty salad recipes to get you back into fall salads 🥒🥑

Green Goddess avocado oil-based dressing available at Whole Foods.

Green Goddess Salad

Makes 1

Type Vegan, Gluten-Free

Time 10 minutes

Ingredients

  • 2 cups boston lettuce

  • 1/2 cucumber (chopped)

  • 1 vegan chicken

  • 1 tbsp sunflower seeds

  • 1 tbsp green goddess dressing ( I use Chosen Foods)

Instructions

  1. Warm vegan chicken in microwave or oven.

  2. While you're waiting for the chicken to heat, wash & shred lettuce in a bowl.

  3. Chop cucumber into cubes and place on top of lettuce.

  4. Sprinkle on sunflower seeds, add chicken.

Notes

*If you don't have sunflower seeds you can substitute them with other toppings such as slivered almonds, walnuts, or chia seeds.
